The materials that do not come from the orchard itself are provided by producers who respect the natural processes, the purity and seasonality of the materials, and the local tradition.
What is not consumed, returns to the soil with the help of our worms, enriching it and preparing it for a new, more prosperous crop.

We toured the active olive oil organic farm owned by Anna outside of Athens. Anna was the farm owner who was a true delight and taught us so much about the art of producing olive oil and the history of the olive trees. The olive oil tasting was wonderful and made me feel like a chef! This was such a unique and fun learning experience. Consider staying for lunch after your tour. This was an excellent afternoon. Anna is passionate, engaging and informative about olives, the production of oil, and the qualities to look for in tasting olive products. I went with my father, an organic farmer, who can be a tough critic, but he was inspired by Anna's approach and energy to educate the urban population of Athens about the realities of food production. A very memorable experience. Highly recommended.
